A delicious recipe! So good for fall and winter.
2 yellow squash, chopped
2 zucchini, chopped
1 onion, chopped
2 carrots, chopped
2 cans of stewed tomatoes
1 pkg. fresh tortellini
Chop your veggies and saute them in about 2 Tbsp of oil until soft.
Add enough water to cover veggies and add in stewed tomatoes and tortellini.
Serve with bread and Parmesan cheese.
